We are recruiting an Assistant Executive chef to run a large private kitchen for a VVIP principal in Abu Dhabi. You will also need to show a high level of menu creation alongside the Executive Chef in the past and how you would evolve the menu over time whilst managing a team of chefs. Candidates must have either huge household experience or preferably Palace experience in the Middle East to go for this role.

Responsibilities
  • Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trends.
  • Ensure that all areas under supervision, i.e. kitchen, stores, fridges are maintained at the highest level of hygiene and cleanliness to the 5-star standards. Ensuring that all expected standard and norms of Local Health Authorities(ADFCA), Company Quality Control department are meet while using the principals of HACCP at all times
  • Demonstrate leadership qualities and be a strong leaders as well as team player. Being able to communicate with staff is the key, especially when stress mounts and tempers rise.
  • Lead by example, keeping stations clean, preparing foods properly, and cooperating with others. He or she should make decisions that get the best out of every situation, and ignore his or her ego if it arises.
  • Offer suggestions or creative ideas that can improve upon the kitchen’s performance.
  • Undertake any other tasks as may be assigned from time to time.
Ideal Candidate
  • Male only
  • Minimum 5 years experience as a sous chef
  • Knowledge of international and local cuisine and different cooking techniques.
  • Excellent English communication skills. Leadership Skills.
  • Planning and organising large and formal events experience
