We’re looking for an experience Bar Manager for a luxury chateau in the South of France. Working alongside the Maître d’Hôtel and the Catering Manager, you will train and organise the team across all areas of the F&B team (indoor restaurant, terrace, poolside, event).

Responsibilities

  • The Bar Manager is also responsible for the perfect control of costs and margins, through his exemplary management of drink ratios
  • You will assist the Manager in achieving yearly financial goals

  • You will be responsible for the growth of the sales within the Beverage department, with targets established at the beginning of each period
  • You will provide business development in the F&B areas, establishing and managing techniques and policies of upselling and cross-selling across all departments to maximize revenue.
  • Inventory management (inventories, orders from suppliers, verification of deliveries).
  • Cashier management: check tills on a daily basis – opening and closing tills
  • Development of the profitability of the bar in line with the objectives set by the Management
  • Master the purchase of bar products and all the small expenses of the bar, according to the budget.
  • Control of the ratios and measurements of the bar
  • Relationship with suppliers in collaboration with the F & B manager.
  • Analyze the offers and costs in order to optimize the rates, reflection with the director on the partnerships to be developed, respect of margins and costs.
  • Management and development of customer relations (with owners, regular customers and holidaymakers)
  • Develop and adapt the bar menu according to customer needs.
  • Ensure integration, ongoing training for the service team so that the entire team is able to provide an impeccable bar experience to each client
  • Prepare drinks in the allotted time and ensure the smooth running of the service (refilling of refrigerators before and after the service)
  • Management of IT and other service tools (ProTel, TCPos etc)
  • Ensure cleanliness, hygiene (HACCP)

We’re looking for an experienced Front of House professional for a new Assistant Maître D’ role in the South of France. You will assist the Maître d’Hôtel and the Catering Manager in the catering and events department at the luxury château.

This is a key role in order to ensure the quality of service is consistent across all areas of the property (indoor restaurant, terrace, poolside, events). We’re looking for a Fluent French and English speaker to train and organise the team on a daily basis.

Responsibilities

  • You will look after accounts and budgets to ensure profit margins are hit
  • You will be responsible for ensuring excellent service and very high level of customer satisfaction on a daily basis, in the medium and long term.
  • Manage and train the French speaking Front of House team
  • You will maintain high levels cleanliness of the restaurant and communal areas, working to a high level of attention to detail
  • Inventory management (inventories, orders from suppliers, verification of deliveries …)
  • Relationship with suppliers in collaboration with the F&B manager and the Head Chef
  • Cash Management: checking the cash registers on a daily basis
  • Management of IT and other service tools (ProTel, TCPos etc)
  • Look after all elements of the restaurant to ensure high customer satisfaction, including all of the other elements that make the customer’s experience in the dining room pleasant (i.e. the atmosphere, lighting, temperature, music etc.)

Barge Host – Seasonal

We are currently recruiting for a hostess for a luxury hotel barge in France. The vessel cruises the French canals, so this is an exciting opportunity for someone to explore beautiful regions of France. The barge is also recruiting a chef for the summer season, so this position can be open for a chef/host couple.

The “Barge Host” is a pivotal position, and you will have a huge impact on the guests’ time on board. Engaging daily with our guests you must be someone who is energetic, organized and focused on providing the guests with a seamless, stress-free, quality experience during their time on board.

Responsibilities

Your duties will include:

1) Maintain the highest of standards of cleanliness and presentation of all guest areas. This will include thorough daily cleaning etc of guest cabins, en-suites and salon.

2) Preparing the table and serving/presenting the food, cheeses and wines at mealtimes. A high level of silver service experience is preferred though training can be offered if necessary.

3) Serving pre-meal drinks, preparing basic cocktails and generally “checking” with the guests that they have everything they need.

4) Having an eye for detail, aesthetics and pride in your work. The barge is one of the most beautifully presented anywhere on the canal network and we take great collective pride in ensuring these high standards are observed throughout the season.

4) Keeping the bar area stocked up, and ice available.

5) Learning about our fine wines on board and presenting them when serving at meal times. Maintaining wine stocks in the chill cabinets and inventory in store on the boat.

6) Keeping on top of laundry and ironing and tidy storage of products under the remit of the hostess. Sheets, duvet covers and pillowcases go to external laundries, tablecloths, napkins, towels and robes are laundered on board.

7) Being prepared to learn about the local area where we cruise, a little knowledge helps when guests are enquiring about the route and our progress through the week.

The ideal candidate

The ideal candidate will have several years’ experience in hospitality at a 4 or 5* level. We are looking for a candidate with great initiative and someone who is flexible, as whilst this is an outline description of your principal duties, you may be required to assist with other aspects of managing the barge.

Good spoken English and a clean driver’s license, valid in France, is essential.
