We are looking for a Head Chef to run the kitchen in a busy Ski Academy in Tignes in the French Alps, to be assisted by (two Sous Chefs).

Responsibilities

  • Designing meal plans: Reporting to the Performance Director and guided by our consulting doctor, you’ll be responsible for designing and producing a nutritionally balanced meal plan; which includes fuel for training and races.
  • Team management: Managing the kitchen team which involves recruitment, management, and appraisal of the kitchen staff. which will include two commis Chefs
  • An appropriate candidate will be highly organised and able to develop relationships with the suppliers and the local community.
  • Regulatory requirements: Due to the nature of our organisation, we must adhere to the highest standards for storing, preparing, and delivery of food. Knowledge and experience of such regulations are imperative.
  • Budget management: Provision of nutritionally balanced meals and snacks suitable for elite athletes, while operating within a pre-authorised budget.
  • Abilities and skills
  • Ongoing professional development: Look for feedback from athletes and staff on ways to improve the menu and meet the nutritional requirements of the athletes. Reflecting on practice and seeking ways to improve.
  • Flexibility:  The ski program is susceptible to change. Weather conditions, race schedules, and a demanding program mean that there are changes to athlete and staff movements. With suitable communication of a change, a candidate should be able to cope with amendments to the program and the impact on catering.
  • Mindset: The aspirations of the academy are high. The strength of our business comes from our team. As a result, a suitable candidate will have a positive mindset who has a proven record of being a strong team player.
  • Communication: An appropriate candidate will be an experienced communicator. Responsibility for management of the kitchen team and liaising with the Performance Director.

Essential requirements

  • Languages: Fluent in English and have some good knowledge of French
  • Background check: Working with minors, we will need to run an Enhanced DBS check. DBS for the UK or DBS equivalent if you live outside the UK

Chef/Host Couple

We are looking for a couple to run a 14 -16 person chalet in La Tania. You must have lots of enthusiasm, an eye for detail and a professional attitude.

Responsibilities

We are looking for an experienced chef with a restaurant/hotel background, who is able to create interesting, up to date menus to the highest possible standards. We offer a generous budget and would give the chef free rein to design their own menu.  You will be expected to design a four-course dinner menu to include canapés, starter, main course, and dessert.

The chef is supported by the chalet host, who will assist the chef in the kitchen, carry out daily cleaning of the chalet, and they will welcome the guests, assisting with lift passes, ski hire, ski school and perform a welcome speech. You must create a welcoming and relaxed environment in the chalet and ensure that the highest level of service is given to our guests at all times.

You must be friendly and outgoing, and feel at ease chatting to the guests, making them feel relaxed and welcome.

Villa Couple

We are looking for a welcoming and hospitable villa couple for a family villa in Ibiza in July and August.
The villa is rented each year by the family for 2 months, it becomes a home from home.

This is a seasonal position with the opportunity to stay on in the family’s chalet in the French Alps for the winter.

Responsibilities

  • Offering warm hospitality and looking after the principal and his guests
  • Creating a weekly menu of light Mediterranean dishes, Ottolenghi style salads, grilled meats, and fish. Mainly lunches and dinners, the family tends to prepare own breakfast, but fairly ad-hoc. You will have weeks where you will be cooking for 4-6 people, and weeks where you will just be feeding only the principal!
  • Preparing, laying out, plating up and clearing of all meals
  • Daily cleaning and tidying of the villa (making beds, cleaning bathrooms, kitchen)
  • Weekly deep cleaning of villa preparing for the arrival of new guests, laundry, beds
  • Weekly shopping for food in Santa Eularia at Mercadona
  • Driving of family and guests around to restaurants etc. and all airport runs (20 minutes to the airport)
  • Ad-hoc other duties as required

Ideal Candidate

  • The chef must be passionate about rustic food, ideally trained, and happy to design his or her own menu within a budget. With a maximum of 10 to cook for, the chef must be able to add some creative garnishes and plate up beautifully. Although we expect a high level of cooking, we don’t ask our chefs to spend all day in the kitchen. The food should be a good standard of home cooking, not haute cuisine.
  • The villa host will be professional, presentable and friendly, and their role will involve looking after the principal and the family, and his guests, making them feel welcome and happy in the villa. Your main role will involve maintaining extremely high standards of cleanliness, which will involve daily cleaning throughout the villa. You will also be “front of house” at meals, ensuring that the quality of the food delivered by the chef is matched by your levels of service. You will both need a passport, a UK National Insurance Number, and at least one of you will hold a clean, valid drivers’ license and be over the age of 25 (for car insurance purposes). You will get one day off a week.

The company offer catered holidays all year round and we’re looking for a chef that has experience in private catering to join the team and create bespoke menus for the summer and potentially beyond.

Responsibilities

Your main duties will include, but not be limited to duties:

  • Managing and taking ultimate responsibility for the kitchen
  • Working alongside a Chalet Host and a Property Manager/Rep/Driver
  • Preparation of a hot and cold buffet breakfast
  • Preparation of afternoon tea and cakes
  • Preparation of a 4-course evening meal to a high dinner party standard. 4th course is canapés, sorbet or cheeseboard
  • Preparation of buffet picnics & BBQs (summer only)

We are looking for an enthusiastic and experienced chef and host couple to manage a Luxury Villa in the South of France this summer season (May/June to September). The villa is right on the coast, so we’re ideally looking for someone passionate about watersports – with a powerboat license or experience in teaching watersports.

Responsibilities

The Chef:

  • Provisioning, preparing and cooking daily breakfast and 6 evening meals per week. (Sometimes guests requests to swap dinner for lunch service).
  • Processing weekly accounts and working with the client’s dietary requirements.
  • Contacting clients prior to their stay to arrange their menu and discuss any provisioning prior to arrival.

The Host:

  • Daily housekeeping and mid-stay linen change.
  • Hosting meals and assisting clients with concierge service, booking activities, reservations etc.

Together:

  • Together you will manage the daily pool and spa checks (an external company manages the maintenance of pools and gardens).
  • As a couple you are responsible for the villa cleaning, manage and report any problems and be able to call out contractors as and when required.
  • Work closely with our office team on all client arrival details and requests.

  • A fun, enthusiastic couple who have managed a luxury villa or chalet before in the respective roles.
  • The applicants must each have a UK National Insurance number and a UK bank account.

We’re looking for someone who is meticulous in detail and presentation, with previous experience of restaurant kitchens and a passion to please the guests with consistently outstanding food and service.

Responsibilities

  • The half-board Chef will be in charge of the kitchen as a department and is expected to prepare and cook 3-course evening meal 5 days a week for up to 30 guests.

Other duties include but are not limited to:

  • Create an exciting fixed half-board menu that complements the hotel’s reputation and fits the commercial requirements of the company
  • Cater to any specific guest dietary requirements
  • Prepare fresh homemade cake or homemade cookies for afternoon tea 7 days a week
  • Manage the purchasing and production of food, carry out continuous stock control to minimise the waste;
  • Enforce Health and Safety, Food Hygiene and COSHH legislation and conform with best practices in the industry
