A boutique hotel in Les Gets, Portes du Soleil is looking for an experienced chef to join their alpine summer chalet hotel and to own every detail in the kitchen, cooking on a half-board basis. From creating a menu and preparing/cooking the evening meals for 5 evenings per week, to managing stocks, organising the kitchen and delivering exceptional service.

We’re looking for someone who is meticulous in detail and presentation, with previous experience of restaurant kitchens and a passion to please the guests with consistently outstanding food and service.

Responsibilities

  • The half-board Chef will be in charge of the kitchen as a department and is expected to prepare and cook 3-course evening meal 5 days a week for up to 30 guests.

Other duties include but are not limited to:

  • Create an exciting fixed half-board menu that complements the hotel’s reputation and fits the commercial requirements of the company
  • Cater to any specific guest dietary requirements
  • Prepare fresh homemade cake or homemade cookies for afternoon tea 7 days a week
  • Manage the purchasing and production of food, carry out continuous stock control to minimise the waste;
  • Enforce Health and Safety, Food Hygiene and COSHH legislation and conform with best practices in the industry
  • Carry out basic equipment maintenance
  • Manage, delegate, train and motivate the hotel team regarding any kitchen related duties (usually daily breakfast service but also should they be assigned to help with  kitchen related duties on busier nights)

We have a unique and exciting opportunity for a skipper/cook to work in a lovely family summer home in southern Corsica.  We’re looking for a candidate with good cooking skills, as well as good experience with small boats as the client also owns a small boat.

This is a great opportunity for someone to have a good mix of life on land and at sea with a great work/life balance. You will be working alongside a housekeeper and gardener who already work for the family.

Responsibilities & Ideal Candidate:

Chef: There will always be the principals in residence, but they enjoy having 2-4 guests for meals, a few times a week.  Then occasionally like might host bigger groups for dinner parties, however, if large enough they might get additional help in.

The principals like a focus on healthy eating and will work with you to plan meals together. The chef must shop and keep everything stocked and the kitchen area clean. (No housekeeping duties in the rest of the house).  So, driving licence is essential as the property is 15 minutes out of town and basic French would be great for shopping.

Skipper: The clients have a small motor boat, 7,5 m. Boston whaler. They like to go out for a few hours once or twice a week, weather permitting. The candidate must have valid permit, and safe boating skills and experience as the Mediterranean can be shifty and risky.

Your working hours won’t be set, so we’re looking for someone who is flexible as if there are events or house guests, we’ll expect more hours, but will balance that out during low-activity periods.

She has worked as a cook in a restaurant and can assist in food preparation, sourcing ingredients and cooking on your rest days.

  • You will typically be looking after the eating requirements of 15-20 guests, with occasional larger events of around 50 people. For the larger events, we will hire in assistance as required.

Responsibilities of the Host

Your duties will include:

  • Maintain the highest of standards of cleanliness and presentation of all guest areas. This will include thorough daily cleaning etc of guest cabins, en-suites and salon.
  • Preparing the table and serving/presenting the food, cheeses and wines at mealtimes. A high level of silver service experience is preferred though training can be offered if necessary.
  • Serving pre-meal drinks, preparing basic cocktails and generally “checking” with the guests that they have everything they need.
  • Having an eye for detail, aesthetics and pride in your work. The barge is one of the most beautifully presented anywhere on the canal network and we take great collective pride in ensuring these high standards are observed throughout the season.
  • Keeping the bar area stocked up, and ice available.
  • Learning about our fine wines on board and presenting them when serving at meal times. Maintaining wine stocks in the chill cabinets and inventory in store on the boat.
  • Keeping on top of laundry and ironing and tidy storage of products under the remit of the hostess. Sheets, duvet covers and pillowcases go to external laundries, tablecloths, napkins, towels and robes are laundered on board.
  • Being prepared to learn about the local area where we cruise, a little knowledge helps when guests are enquiring about the route and our progress through the week.

Responsibilities of the Chef

  • Have a good working knowledge of food in general and have an active interest in the food of the region.
  • You will need to be able to demonstrate good presentation skills and be organised with your provisioning, as you’re not always close to a supermarket.
  • You will provide the breakfast, lunch and dinner for the 6 guests who will be staying aboard with 2 lunches being had off of the boat. Also cooking for your fellow crew members and preparing crew food is essential for a happy boat!
  • Lunches can be plated or buffet, but ideally should include both. The evening meals are more formal and usually consist of four courses, starter, main, cheese and dessert with perhaps an amuse bouche to create a perfect balance of flavours and interest.
  • The hotel barge galley is the Chef’s domain, and safety, cleanliness, and food hygiene are the up-most priorities and the responsibility of the Chef.
  • It is essential that the Chef has suitable training and holds relevant certificates. Safety must include awareness and management of all safety equipment. Food hygiene must correspond to the strict norms of the restaurant industry.
  • The Chef is also responsible for shopping, stock management and bookkeeping.

We are currently recruiting for a hostess for a luxury hotel barge in France. The vessel cruises the French canals, so this is an exciting opportunity for someone to explore beautiful regions of France. The barge is also recruiting a chef for the summer season, so this position can be open for a chef/host couple.

The “Barge Host” is a pivotal position, and you will have a huge impact on the guests’ time on board. Engaging daily with our guests you must be someone who is energetic, organized and focused on providing the guests with a seamless, stress-free, quality experience during their time on board.

Your season will be broken down into 2 periods: 18 May – 7 July (7 Weeks) and 3rd Aug – 12 Oct (10 Weeks). This breaks down as 11 weeks of cruising with guests, 1 week with media on board, 2 weeks re-positioning the barge and 3 weeks non-cruising. This may change in the advent of further bookings being received.
