A family based in Malta is looking for a Domestic Couple to come and run their large property – from cooking and cleaning to light maintenance and service they are looking for ‘all-rounders’. The household is expected to be run semi-formally and formally when guests are at the property.

The estate consists of two properties, the main residence, and the guest house/office. They also have 2 pools and a garden. You will be responsible for the daily chores and maintenance/upkeep of the property as well as assisting their guests where needed. They have busy schedules, so PA duties will be involved too.

We have a fantastic live-aboard opportunity for a couple on a luxury barge this summer, taking holidaymakers along the waterways of France. We’re looking for an experienced chef and host couple who are able to provide 5-star service and fine-dining cuisine.

Your season will be broken down into 2 periods: 11 May – 7 July and 4 Aug – 1 Oct.

Responsibilities of the Host

Your duties will include:

  • Maintain the highest of standards of cleanliness and presentation of all guest areas. This will include thorough daily cleaning etc of guest cabins, en-suites and salon.
  • Preparing the table and serving/presenting the food, cheeses and wines at mealtimes. A high level of silver service experience is preferred though training can be offered if necessary.
  • Serving pre-meal drinks, preparing basic cocktails and generally “checking” with the guests that they have everything they need.
  • Having an eye for detail, aesthetics and pride in your work. The barge is one of the most beautifully presented anywhere on the canal network and we take great collective pride in ensuring these high standards are observed throughout the season.
  • Keeping the bar area stocked up, and ice available.
  • Learning about our fine wines on board and presenting them when serving at meal times. Maintaining wine stocks in the chill cabinets and inventory in store on the boat.
  • Keeping on top of laundry and ironing and tidy storage of products under the remit of the hostess. Sheets, duvet covers and pillowcases go to external laundries, tablecloths, napkins, towels and robes are laundered on board.
  • Being prepared to learn about the local area where we cruise, a little knowledge helps when guests are enquiring about the route and our progress through the week.

Responsibilities of the Chef

  • Have a good working knowledge of food in general and have an active interest in the food of the region.
  • You will need to be able to demonstrate good presentation skills and be organised with your provisioning, as you’re not always close to a supermarket.
  • You will provide the breakfast, lunch and dinner for the 6 guests who will be staying aboard with 2 lunches being had off of the boat. Also cooking for your fellow crew members and preparing crew food is essential for a happy boat!
  • Lunches can be plated or buffet, but ideally should include both. The evening meals are more formal and usually consist of four courses, starter, main, cheese and dessert with perhaps an amuse bouche to create a perfect balance of flavours and interest.
  • The hotel barge galley is the Chef’s domain, and safety, cleanliness, and food hygiene are the up-most priorities and the responsibility of the Chef.
  • It is essential that the Chef has suitable training and holds relevant certificates. Safety must include awareness and management of all safety equipment. Food hygiene must correspond to the strict norms of the restaurant industry.
  • The Chef is also responsible for shopping, stock management and bookkeeping.

The ideal candidates

The ideal candidates will have several years’ experience in hospitality at a 4 or 5* level. We are looking for candidates with great initiative who are flexible, as whilst this is an outline description of your principal duties, you may be required to assist with other aspects of managing the barge.

  • Responsible for the day to day running of The property

  • Act as a line manager to all members of the floor, kitchen, bar and house-keeping team to oversee and ensure smooth across the board
  • Oversee and implement policy and procedures
  • Take responsibility for recruitment, training and the on-going management of the team within the guidelines and objectives of the property
  • Create and maintain objectives, targets for food, bar and room sales
  • Undertake the necessary administration – banking, reconcile daily takings, wages, rotas, menus etc.
  • Ensure the building and facilities are well maintained and kept at a high standard
  • Set and monitor standards relating to customer service
  • To ensure the well-being, satisfaction and comfort of all residents and customers
  • Be an approachable point of contact for staff and customers
  • Support, nurture and guide the team; and put time aside for team events and incentives
  • Encourage and act upon customer comments and complaints to improve product

HEAD CHEF OVERVIEW (BAR MANAGER OPTION AVAILABLE)

Responsible for the smooth running, success and profitability of restaurant. Management of and assisting in recruiting a strong and happy kitchen team. Keeping the kitchen accounts and admin in good order and maintaining the great supplier relations we have built. Re-working meus regularly according to the seasons, feedback and local produce available. Responsible for putting together function menus and planning outside catering events. You will need to work alongside the General Manager and Director to meet the needs of the business, finance and product.

REQUIREMENTS (NOT LIMITED TO):

  • Three years’ experience in a reputable restaurant or gastro pub is essential
  • A keen financial awareness, responsible for achieving the necessary margins and managing the kitchen accounts is a must.
  • Keeps high standards of hygiene and organisation, is self-motivated and punctual.
  • Experience in leading a successful kitchen team or section.
  • Previous work on outside functions and catering is a bonus.
  • The right candidate will have the maturity and patience to assist in the growth and continuous development of the menu and pub as a whole.

We are recruiting a couple for a villa in the beautiful isle of Corsica. This is a 5-bed, large property & the number of clients varies between 2-10 depending on the week. This will be a seasonal position, but the client would love if the couple wanted to return in the following years. The candidates have ideally worked together running a property in the past, either private households, villas or chalets.

This will be an exciting and varied role for the right couple. The villa is in Corsica, facing the ocean so a very beautiful location. You will If more than 3 bedrooms are booked out, an additional housekeeper comes in. There is also a gardener and pool man. The role is for the summer months with bookings in July through to the beginning of September although clients are not there the full time.

Responsibilities and duties

They are looking for a chef and one housekeeper/host – and you must provide a high level of service. Your duties will include:

  • Setting up the table and service of all meals,
  • Providing breakfast, sometimes buffet lunch and dinner for the guests,
  • Washing up and packing down of the table,
  • Daily housekeeping of all bedrooms and bathrooms, including the making of beds,
  • Daily cleaning of all public areas,
  • Ensuring the cleanliness of the kitchen and ensuring the highest standards of hygiene are maintained,
  • Thorough cleaning the villa between guests,
  • Laundry of all bed linen & towels,
  • Making necessary preparations for new guests when the villa is rented out,
  • Stocktaking, shopping and ensuring the villa is fully stocked,
  • Minor household repairs.
  • All cleaning and housekeeping of the villa and some and taking care of the cats.

We are looking for a couple who will create a welcoming and relaxed environment in the villa and ensure that the highest level of service is given to your guests at all times. You will be friendly and outgoing, must take pride in your work, with an eye for detail and genuinely care about the guests. A big smile and lots of energy are imperative – you must be well organized, with excellent timekeeping skills. We are looking for a proactive couple who will see what needs doing and gets it done.

Benefits

The salary is €6000 between you per month + a maisonette/mobile home (two bedrooms) and meals covered when the client is there. When you have clients, there’s no day off, but you will get time off during the afternoon for yourselves. When it is the owners, it’s just the two of them and you will definitely get a day off. The owners live around the corner, so you won’t be left to figure things out by yourself.
